After a heater at the Blackjack Switch and Craps tables we worked up an appetite and left the gaming floor in search of dinner. On the way to MGM from Mandalay Bay on the lower level is Rick Moonen’s RM Seafood. The bar and main level dining room is more casual and bustling, while the upstairs is elegant fine dining. Rick Moonen is a supporter of sustainable fishing and seafood. RM’s is also home to a food challenge, the RM’s 4×4x2 challenge, where diners are presented a matrix of 16 flavors of ice cream to identify (if done correctly the ice cream is free). Our waiter said most people miss by only one or two flavors.
